I am not sure which temperature you want to display, bit I am in the process of designing am information panel for the MN12 Ford TBirds. This panel displays some of the temperatures that are important such as intake air charge (important for blown applications), engine coolant, transmission oil temperature, Air Fuel Ratio and probably fuel pressure for my late model Stang. Ford uses analog sensors which return a voltage. Any of the microcontrolles which have A/D converters will be OK but you will need the transfer funtion of the sensor tho. for the lookup table.
